The YSSINGEAUX is not only a beautiful and practical knife, it is of great importance for the history of French knives. Its roots are in Auvergne, more precisely in the Massif-Central of the 18th century. He is the ancestor of a family of knives, which, decades later, one of the most famous knives in France, LAGUIOLE, was going to develop. This family of knives has a number of common features, including the so-called Bourbonnais blade (in the form of a sage leaf with the centered tip) and a straight handle with a characteristic curved end that is called Beak-off -Corbin. This family also includes SAINT-MARTIN, LAGUIOLE-LAW or ROQUEFORT and in the meantime disappeared ISSOIRE and BRIOUDE. The YSSINGEAUX itself was originally a knife of the peasants and breeders of Auvergne. It has enjoyed great popularity to Cantal wild and south, the Cevennes and Causses. When there were still the street vendors, the people who traveled in France and Spain with their horse drawn carts, this knife accompanied them. Finally, it was forgotten, replaced by newer models such as LAGUIOLE-1850 and later, modern LAGUIOLES.
